Believe it or not, I had never had the pleasure of enjoying a scone until about a month ago. The absurdity of that statement still gets me.
But just as every new epiphany comes unexpectedly, so did my new appreciation for scones.
A better word to explain my new relationship with scones might be: OBSESSION.
They're just the perfect pastry - light, flaky, melt-in-your-mouth-buttery, sweet but not too sweet, and great with a cup of coffee.
My husband would tell you I've said the word "scone" twice daily since I first tried one (at a minimum).
Of course, it became necessary to try my hand at them. I had lemon poppy-seed scones at my favorite little cafe, The Local Moose, and decided to put my own twist on them...because chia seeds are the bomb and I had them at the house (who actually keeps poppy seeds in their cupboard?). Well, the experiment was a smashing success.
In fact, they were perfect. So perfect, that I just had to share with all the other scone enthusiasts out there.
